Seeds, Peas and Corn
Unlike the seeds we call nuts, culinary seeds come from flowers such as sunflowers or vegetables such as pumpkins.
Like nuts, most seeds are rich in protein, healthy fats (a higher proportion of polyunsaturated fats) and fiber. Minerals (such as magnesium, potassium, calcium, plant iron, and zinc), vitamins B1, B2, B3, and E.
Peas and corn have the same amount of carbs as a slice of bread, but they are healthy carbs, full of nutrients, including protein. Corn is rich in fiber and plant compounds that may aid digestive and eye health. Peas are a highly nutritious food. A single serving of peas contains protein, fiber, antioxidants, vitamins, and minerals. Roasting and salting Peas and Corn make them a tasty treat, just eat in moderation as part of a healthy diet.
